IGA BAKAR

Bahan :
1 kg iga daging sapi
1 ltr air

Saus bumbu, haluskan :
10 siung bawang merah
5 siung bawang putih
50 gr gula merah,sisir
1 sdt merica bubuk
6 cm kencur
100 gr cabe merah keriting
4 sdm kecap manis
1 sdt garam
1 sdm cuka masak

Cara membuat :
  • Potong-potong iga menurut ruasnya. Potong kembali tiap ruasnya menjadi dua bagian
  • Bagi saus bumbu menjadi dua bagian. Lumuri potongan iga dengan 1/2 bagian bumbu. Simpan dalam lemari pendingin semalaman. Simpan sisa saus bumbu dalam lemari pendingin.
  • Masukkan iga berbumbu dalam panci tekan. Tambahkan air dan aduk rata. rebus dalam api sedang selama 30 menit hingga empuk. angkat.
  • Keluarkan sisa saus bumbu, masak sebentar di atas api hingga hangat,
  • Ambil iga, bakar di atas bara api sambil diolesi saus bumbu hingga agak gosong.
  • Angkat, sajikan panas dengan saus bumbu.

Ingredients:
1 kg beef ribs
1 ltr water

Seasoning sauce, puree:
10 cloves shallots
5 cloves garlic
50 gr coconut sugar
1 tsp pepper powder
6 cm kencur
100 grams curly red chili
4 tablespoons soy sauce
1 teaspoon salt
1 tablespoon vinegar

  • Cut ribs in section. Cut back each section into two parts
  • Split into two parts seasoning sauce. Marinate pieces of ribs with half the seasoning. Store in refrigerator overnight. Save the rest of sauce ingredients in a refrigerator.
  • Enter ribs marinated in a press pot. Add water and stir well. boil in medium heat for   30 minutes until tender. lift.
  • Cook a minute the rest of sauce ingredients to warm it.
  • Take the ribs, grilled over the fire while smeared the sauce until slightly charred.
  • Remove and serve hot with sauce seasoning.
