SOTO AYAM AMBENGAN

Bahan :
1 ekor ayam kampung muda
2,5 liter air
4 btg serai, memarkan
7 lbr daun jeruk purut
2 lbr daun salam

Bumbu halus :
8 siung bawang putih
4 siung bawang merah, haluskan
3 cm kunyit
3 cm jahe
2 sdt merica bubuk
5 butir kemiri sangrai
1/2 sdt lengkuas bubuk
50 gr udang kecil kupas dan goreng kering

Koyah, haluskan :
150 gr kerupuk udang goreng
2 sdm bawang putih goreng
1/4 sdt garam

Pelengkap :
200 gram soun yang sudah direbus dan ditiriskan
5 butir telur rebus yang sudah dipotong
3 batang daun bawang
bawang goreng, jeruk nipis, kecap manis sesuai selera

Cara membuat :
  • Rebus ayam dengan serai, daun jeruk dan daun salam hingga matang.
  • Tiriskan ayam kemudian goreng hingga kecoklatan lalu suwir-suwir.
  • Tumis bumbu halus sampai harum, lalu masukkan ke dalam kaldu.
  • Susun dalam mangkuk : daging ayam, soun, telor. Siram dengan kuah panas.
  • Beri perasan jeruk nipis dan kecap. Taburi dengan bawang goreng, daun bawang dan koyah. Selamat mencoba.

Ingredients:
1 whole young chicken

7 lime leaves
2 bay leaves

Spices:
8 cloves garlic
4 cloves mashed red onion 
3 cm turmeric
3 cm ginger
2 tsp pepper powder
5 grains toasted candlenuts
1 / 2 tsp galangal powder
50 g small shrimp peeled and fried

Koyah, mashed:
Fried shrimp crackers 150 gr
2 tablespoons fried garlic
1 / 4 teaspoon salt

Complement:
200 grams glass noodles that have been boiled and drained
5 boiled eggs that have been cut
3 stalks scallions
fried onion, lime juice, soy sauce to taste

How to cook :
  • Boil chicken with lemongrass, lime leaves and bay leaves until cooked.
  • Drain the chicken and then fried and cut lengthwise.
  • Stir fry smooth flavor until fragrant, then put into the broth.
  • Arrange in a bowl: chicken, glass noodles, egg. Sprinkle with hot sauce.
  • Give the lime juice and soy sauce. Sprinkle with fried onions, scallions and koyah. Enjoy
