SOTO BETAWI

Bahan:
600 gr daging
400 gr hati sapi
2 ltr  kaldu daging
1 ltr  santan kental
4 sdm  minyak goreng

Bumbu:
4 cm jahe, memarkan
4 cm lengkuas, memarkan
4 sendok makan kecap manis
4 lembar daun salam
4 cm kayu manis
Garam secukupnya

Bumbu yang dihaluskan:
15 siung bawang merah
4 siung bawang putih
2 sendok teh pala
1 sendok teh jinten, sangrai
2 sendok teh lada butir
5 butir kemiri, goreng
2 sendok teh ketumbar, sangrai

Pelengkap:
4 buah tomat, belah empat
2 sendok makan seledri cincang untuk taburan
2 batang daun bawang, iris halus
emping goreng untuk pelengkap
Sambal cabai rawit

Cara membuat :
  • Tumis semua bumbu halus sampai harum. Tambahkan daging, hati sapi dan bumbu lainnya, aduk sampai berubah warna.
  • Tambahkan kaldu dan masak sampai mendidih.
  • Tuangkan santan dan masak kembali sampai kuah agak mengental.
  • Sajikan dalam mangkuk dan taburi dengan seledri, daun bawang, tomat, bawang merah goreng dan emping.
  • Hidangkan segera selagi panas.

How to cook:

Bahan :
1 ekor ayam kampung muda
2,5 liter air
4 btg serai, memarkan
7 lbr daun jeruk purut
2 lbr daun salam

Bumbu halus :
8 siung bawang putih
4 siung bawang merah, haluskan
3 cm kunyit
3 cm jahe
2 sdt merica bubuk
5 butir kemiri sangrai
1/2 sdt lengkuas bubuk
50 gr udang kecil kupas dan goreng kering

Koyah, haluskan :
150 gr kerupuk udang goreng
2 sdm bawang putih goreng
1/4 sdt garam

Pelengkap :
200 gram soun yang sudah direbus dan ditiriskan
5 butir telur rebus yang sudah dipotong
3 batang daun bawang
bawang goreng, jeruk nipis, kecap manis sesuai selera

Cara membuat :
  • Rebus ayam dengan serai, daun jeruk dan daun salam hingga matang.
  • Tiriskan ayam kemudian goreng hingga kecoklatan lalu suwir-suwir.
  • Tumis bumbu halus sampai harum, lalu masukkan ke dalam kaldu.
  • Susun dalam mangkuk : daging ayam, soun, telor. Siram dengan kuah panas.

Cara membuat :
  • Tumis bumbu halus sampai harum kemudian masukkan daging sapi. Aduk-aduk hingga daging berubah warna.
  • Masukkan santan, serai dan daun salam.
  • Masak sambil diaduk hingga mendidih. Buang serai dan daun salam.
  • Sajikan soto dengan irisan bawang goreng, tomat, daun seledri dan air jeruk nipis.

Cara Membuat :
  • Rebus ayam dengan air untuk membuat kaldu.
  • Setelah ayam matang, biarkan ayam di dalam kaldu selama setengah jam.
  • Angkat ayam dan suwir-suwir.
  • Tumis mentega, bawang putih, jahe dan bawang bombai sampai harum.
  • Masukkan ke dalam kaldu, didihkan kembali kemudian tambahkan jamur, garam, merica dan kecap asin.
  • Atur mie, sayuran, ayam suwir dalam mangkuk. Tambahkan kuah jamur, bawang goreng dan taburi dengan daun bawang.
  • Sajikan hangat dengan sambal.

Sambal:
Cabai merah besar 1 buah iris tipis dan tambahkan kecap asin 2 sendok makan.
